The best Louisiana and Cajun food ever cooked was served in the home of Charles Cole Sr. (Pop). Pop came from old Louisiana roots (his mother was a Fontenot) that produced many good cooks, but he was truly exceptional. His son John began “learning at the feet of the master” since he was tall enough to see over the stove and is just as good as his father, if not better. Pop was so good because he not only loved to cook, (and took it seriously) but because he truly loved to feed people. Guests who entered his house would always hear Pop ask “Ya hungry?” and usually be handed a plate regardless of the answer.
Pop is no longer with us, but thanks to John, his recipes and other family recipes from across the state of Louisiana and across decades of time have been gathered and preserved in a cook book. This book was never intended to be offered to the public, John put it together to preserve these great recipes for future generations as a family keepsake, or so he thought. The book is now in its fourth printing and has not been advertised until now!
